Natural (Dry Process) – Fully ripe coffee cherries are selectively handpicked and dried with the fruit intact on raised beds or patios. During drying, the beans absorb sugars and fruit compounds from the cherry, producing a sweeter, fruit-forward cup with a fuller body. Some Stanmore microlots also use controlled fermentation before drying to increase complexity.
